Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Shred the zucchini and squeeze out moisture.
  2. In a large bowl, combine the squeezed zucchini, mozzarella, Parmesan, eggs, garlic powder, Italian seasoning, salt, and pepper. Mix thoroughly.
  3. Spread the mixture on the baking sheet to form a thin rectangle about ¼-inch thick. Bake for 20-25 minutes until golden brown.
  4. Remove from oven and sprinkle remaining mozzarella over the top. Return to oven for 5-7 minutes until cheese is melted and bubbly.
  5. Allow to cool for 5 minutes, then slice into sticks. Serve warm with marinara or ranch dressing.
