- Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
- In a large skillet over medium heat, combine ground beef with diced onion. Cook for 6–8 minutes until the beef is browned and onion is translucent. Drain any excess fat.
- Stir in cheddar cheese soup, pickle relish, ketchup, and yellow mustard into the skillet. Cook for an additional 3–4 minutes until creamy.
- Transfer the cheesy meat mixture into the greased casserole dish and spread evenly. Sprinkle shredded cheddar cheese on top.
- Arrange frozen tater tots in neat rows on top of the cheese layer.
- Bake in the preheated oven for 35 minutes until tater tots are golden brown and crispy.
- After 35 minutes, remove the casserole and sprinkle an additional cup of shredded cheddar cheese on top. Return for another 5 minutes until melted.
- Let the casserole rest for a few minutes before serving. Garnish with lettuce and tomatoes if desired.
