Method

Step‑by‑Step Instructions
  1. Begin by chopping the chicken breast into bite-sized pieces, sprinkle Cajun seasoning, garlic powder, and paprika, and cook in a skillet over medium-high heat for 5-7 minutes.
  2. In the same skillet, melt butter, add minced garlic and red pepper flakes, sauté for 1 minute, then pour in heavy whipping cream and stir in cream cheese until smooth.
  3. Lower heat, mix in grated Parmesan, chopped parsley, and additional Cajun seasoning until cheese melts and sauce is creamy.
  4. Stir in the cooked chicken and spinach, cook for another 2-3 minutes until spinach wilts, then remove from heat.
  5. Preheat your oven to 350°F (175°C). Spread a thin layer of reserved sauce in a baking dish, spoon filling on cooked noodles, and roll them up.
  6. Pour remaining sauce over the rollups, sprinkle mozzarella cheese on top, and cover with foil before baking for 12 minutes.
  7. Remove foil, switch to broil for 2-4 minutes until cheese is golden brown and bubbling. Watch closely to avoid burning.
  8. Let the rollups rest for 5 minutes, garnish with parsley, and serve warm with garlic bread and salad.
