- Prepare the Blueberry Compote: In a small saucepan over medium heat, combine fresh blueberries, honey, and lemon juice. Stir gently until the mixture begins to simmer, about 5 minutes. Remove from heat and set aside to cool completely.
- Thicken the Compote (if using cornstarch): Dissolve cornstarch in cold water. Stir this slurry into the warm blueberry mixture, cooking over low heat for another minute until it thickens. Let it cool to room temperature.
- Mix the Yogurt Base: In a mixing bowl, combine Greek yogurt and vanilla extract, stirring until smooth and creamy. Adjust sweetness with more honey if desired.
- Fill the Molds: Spoon the yogurt mixture into silicone molds, filling each cavity about three-quarters full.
- Swirl in the Blueberry Compote: Drop spoonfuls of the cooled blueberry compote on top of the yogurt mixture in each mold. Use a toothpick to swirl the compote into the yogurt.
- Freeze the Yogurt Bites: Place the molds in the freezer for at least 3 hours or until solid.
