Step-by-Step Instructions
  1. Prepare the Blueberry Compote: In a small saucepan over medium heat, combine fresh blueberries, honey, and lemon juice. Stir gently until the mixture begins to simmer, about 5 minutes. Remove from heat and set aside to cool completely.
  2. Thicken the Compote (if using cornstarch): Dissolve cornstarch in cold water. Stir this slurry into the warm blueberry mixture, cooking over low heat for another minute until it thickens. Let it cool to room temperature.
  3. Mix the Yogurt Base: In a mixing bowl, combine Greek yogurt and vanilla extract, stirring until smooth and creamy. Adjust sweetness with more honey if desired.
  4. Fill the Molds: Spoon the yogurt mixture into silicone molds, filling each cavity about three-quarters full.
  5. Swirl in the Blueberry Compote: Drop spoonfuls of the cooled blueberry compote on top of the yogurt mixture in each mold. Use a toothpick to swirl the compote into the yogurt.
  6. Freeze the Yogurt Bites: Place the molds in the freezer for at least 3 hours or until solid.
