Baked Chicken Ricotta Meatballs Instructions
  1. Preheat your oven to 400°F (200°C). Gather your mixing bowl and all ingredients.
  2. In a large mixing bowl, combine ground chicken, ricotta cheese, chopped spinach, breadcrumbs, and egg. Mix until just combined.
  3. Roll the mixture into meatballs, about 1.5 inches in diameter, and place in a greased baking dish.
  4. Bake for 25-30 minutes, until browned and cooked through (internal temperature of 165°F/74°C).
  5. In a saucepan, simmer heavy cream and minced garlic over medium heat for about 5 minutes.
  6. Whisk in Parmesan cheese and Italian seasoning until smooth and creamy.
  7. Pour the sauce over the baked meatballs and gently toss to coat.
  8. Return to the oven for an additional 10 minutes to meld flavors.
  9. Garnish with fresh herbs and serve warm.
