Ingredients
  

Dressing
  • 1 cup mayonnaise or Greek yogurt for lighter option
  • 2 tablespoons red wine vinegar substitute with white wine vinegar or lemon juice
  • 2 tablespoons olive oil extra virgin recommended
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning fresh herbs can enhance taste

Salad
  • 12 ounces rotini pasta any short pasta can be used
  • 4 ounces salami sliced into bite-sized pieces
  • 4 ounces pepperoni sliced into bite-sized pieces
  • 4 ounces ham sliced into bite-sized pieces
  • ½ cup pepperoncini peppers sliced
  • 4 ounces provolone cheese diced
  • 1 cup cherry tomatoes halved
  • 2 cups iceberg lettuce shredded, added before serving
  • ½ cup black olives pitted and sliced

Method
 

Dressing Preparation
  1. In a medium bowl, whisk together mayonnaise, red wine vinegar, olive oil, minced garlic, and Italian seasoning. Season with salt and black pepper to taste. Cover and refrigerate for 30 minutes.
Pasta Cooking
  1. Boil salted water in a large pot, add rotini pasta, and cook until al dente (8-10 minutes). Drain and rinse under cold water.
Ingredient Preparation
  1. Slice salami, pepperoni, and ham into bite-sized pieces. Dice provolone cheese and chop cherry tomatoes, pepperoncini, and olives.
Combining Ingredients
  1. In a large mixing bowl, combine cooled pasta with all prepared ingredients, gently tossing to distribute evenly.
Dressing the Salad
  1. Pour the dressing over the pasta mixture and gently toss until everything is coated evenly.
Chilling and Serving
  1. Cover bowl and refrigerate for at least 30 minutes. Add shredded lettuce before serving.
